INGREDIENTS:

  • ½ Cup Vegetable Oil.
  • 6 Scotch Bonnet.
  • 1 Large Onion.
  • 2 Large Bell Peppers.
  • Ugu (Fluted Pumpkin) Vegetable.
  • 1 tablespoon Curry.
  • 1 tablespoon Thyme.
  • Seasoning according to preference.
  • Salt.

PROCEDURE

  1. Add vegetable oil to a non-stick pan and allow to heat up.
  2. Next add stir-fry beef (make sure it is drained of all liquid, pat dry with a kitchen tissue), stir-fry for about 3 minutes.
  3. Add curry, thyme, salt and seasoning cube according to your taste.
  4. Next add some chopped onions, stir fry till onions is translucent.
  5. Blend or pound Scotch Bonnet and Bell Pepper together (make sure it is drained of water if you used any), stir-fry till the oil starts to separate from the sauce.
  6. Wash and drain Ugu vegetable then add to the sauce and stir for a few seconds.
  7. Take it off the heat.

  • 3 Cups Cooked White Rice.

  • 1 Garlic Clove, Crushed.
  • 1 Teaspoon Chopped Fresh root Ginger.
  • 2 Spring Onions.
  • 1 Tablespoon Soy Sauce.
  • 3 Tablespoon Oyster Sauce.
  • ½ Red Bell Pepper, Sliced into thin strips.
  • ½ Green Bell Pepper, Sliced into thin strips.
  • 1 Carrot, Sliced into thin Strips.
  • 1 Cup Stir fry Beef.

PROCEDURE

  1. Stir fry beef strips that are easier to cook. Sprinkle Salt and Pepper over beef and allow to sit for 5 minutes.
  2. Heat up non-stick pan, adding a Tablespoon of vegetable Oil. When the pan is hot, place stir fry beef and stir for 2 minutes till brown.
  3. In the same pan, add Onions, Ginger , Garlic, Green Pepper, Red Pepper and Carrot, stir fry for a minute.
  4. Add rice and toss some more so that it is not clumpy, season with soy sauce, add oyster sauce, and the stir fry.
  5. Once cooked, add spring onions and toss over the heat to mix.
